Can I reset a unit's veterancy path?

Yes, and it is free up to level 200. After that it costs a scroll, which you buy with silver from the smuggler.

You should not need it often though. Check the unit's guide and pick the right path from the start: patch notes rarely move the meta veterancy, so most people go a whole season without ever swapping one.
